CLAP Dubai, a high-end Japanese restaurant located in DIFC, is seeking an experienced Sushi Sous Chef to support kitchen leadership and maintain the highest standards of Japanese culinary excellence. This role is ideal for professionals with strong sushi expertise and leadership capability.
• Assist the Head Chef in managing sushi section operations
• Prepare high-quality sushi, sashimi, and Japanese dishes
• Ensure consistency, presentation, and quality control
• Supervise sushi commis staff and provide on-the-job training
• Maintain hygiene, food safety, and kitchen cleanliness standards
• Assist with inventory control and stock management
• Support smooth kitchen operations during service hours
• Proven experience as a Sushi Sous Chef or senior sushi role
• Strong knife skills and Japanese cuisine knowledge
• Ability to work in a high-pressure fine-dining environment
• Team-oriented leadership approach
• Professional attitude and attention to detail
