Job Description
The Stewarding Manager is a critical operational role responsible for managing the cleanliness, hygiene, and maintenance of all kitchen equipment, dishware, and food preparation areas. This position ensures the strictest compliance with sanitation standards across all catering facilities.
Key Responsibilities
- Supervise the stewarding team, managing schedules and assigning daily cleaning and sanitation duties.
- Maintain all kitchen equipment, ensuring proper cleaning, maintenance, and storage to maximize lifespan.
- Manage inventory of chemicals, cleaning supplies, and dishware, controlling costs effectively.
- Implement and enforce all local and international HACCP and food hygiene protocols.
- Coordinate closely with the Executive Chef and culinary team to support smooth kitchen flow during peak hours.
Required Skills & Qualifications
- Proven experience as a Stewarding Manager or Supervisor, preferably in a high-volume hotel or catering environment.
- In-depth knowledge of HACCP, food safety, and sanitation regulations.
- Expertise in the operation and maintenance of commercial dishwashing and cleaning equipment.
- Strong organizational skills with a focus on efficiency and safety.
- Demonstrated leadership ability to manage a large, diverse team.
